Thanksgiving 2009!

(makes ~ 3 c)

ingredients

  • roasting pan with drippings from bird
  • 3 c chicken stock (including bird juices)
  • 1/4 c fat (add melted butter or oil to bird fat)
  • 1/4 c flour
  • tt sea salt
  • tt black pepper, freshly ground

    technique

  • place drippings from bird into glass or plastic heat-proof measuring cup
  • let drippings sit & separate (~2-3 min):
  • juices on bottom / fat on top
      write down measures of each:
      juices: ________________________

      fat: ________________________
  • pour off juices carefully into lg measuring cup
  • create stock + juice combo to = 3 c
  • create fat + butter/oil combo to = ΒΌ c
  • add fat back into roasting pan on med heat
  • sprinkle in flour & whisk constantly for ~2 min
  • add stock a bit at a time, whisking constantly
  • whisk til gravy boils
  • cook ~2-4 min more
  • taste & adjust seasoning
  • too thick? add more stock or water
  • too thin? return to low boil & reduce to
